Grilled French Onion Sandwich, you say?
I made the yummiest Grilled French Onion Soup Sandwich from scratch because I'd read about it on HuffPo. My lord ... was it good and easy to make!
The ingredients are basic:
A good crusty bread for slicing
Gruyere cheese (grate it up or slice it thinly)
One large Vidalia onion (cut into 1/8 inch slices)
Couple of ounces of Cognac
Butter
Vegetable Stock(low salt version)
Bit of soy sauce (i like 1 tablespoon - and the low salt version)
Pepper
using medium heat, slow cook the onions in butter ... when it softens and starts to turn golden brown, add the cognac. it is best to have the stove turned off while you stir in the cognac. add a tablespoon of soy sauce & pepper. continue to stir and add about a cup (8 ounces) of vegetable stock. let it come up to a bubble ... your mixture is ready.
slice the bread. butter one side of each slice. put it in a pan and toast and add the Gruyere cheese and a thin layer of the french onion mixture on top. put the top slice ... flip over, and grilled until yummy, crunchy, golden brown.

I LOVE FOOD!!!
I have had a affair with food for as long as I can remember. As a kid, I ate just about anything in sight -- but never could bring myself to eat meat. It had nothing to do with religion, culture or familial way of eating. I just could not stand the smell or texture of meat. Yet - I loved to eat!
It is a minor miracle that I did not develop an eating disorder of some sort ...
Well -- the good thing that happened is that I learned to appreciate food. I wanted to know the origins of the food -- if possible, the background of the cook. Whether it is a restaurant or someone's homemade cooking - I want to know why, when and what!
There's no greater joy than sitting somewhere and eating something & people watching. Well .. maybe there are more -- but that is something that brings me immense joy. You see - you don't even have to like the person sitting next to you (even though, I do like folks I enjoy a meal with) as long as you are tasting food and tasting the world around you with your eyes.
Coffee shops are great, too ... i like the un-starbucks type. Often, the mom & pop coffee shops have great home made items along w/ some yummy, drinkable coffee -- not the kind that puts hairs on your chest and leaving you feel stupid for spending $5 for a cup of coffee : )
As I have gotten older (not that I am admitting to anything) ... I've enjoyed going somewhere for a glass of wine and a small appetizer. Even a couple of hours enjoying a Mojito with some chips & salsa could do the soul some wonders.
Heck ... i enjoy cooking, too. Cooking for friends & family can be so relaxing ... plus, since I always come up with a different version of the same thing and look for the past of least resistence in accomplishing something yummy. There's nothing greater that subjecting your friends & family to your experimental cooking. I would admit - I have no real "base" of cooking culture ... so it is always a hybrid or fusion cuisine of multiple cultural influences. So far, no one's been hospitalized or died --whew!
Often, I have thought I should write about my food experiences -- whether it is an awesome place I discovered or enjoy eating at ... or some crazy recipe I came up with.
Whoever came up with Blogs - I Love You .... because here it comes!
